Lavinia is a beer with an important, but not extreme body with characteristic aromas given by the Sangiovese must and the maturation of at least 12 months in barrique. The beer follows the refinement processes of an important red wine such as, tartaric stabilization, malolactic fermentation and batonnage.
Lavinia green label: 2019 reserve, one year of refinement in ex Chianti Classico barriques
Lavinia red label: 2018 reserve, one year of refinement in ex Chianti Classico barriques and one year in ex Brunello grappa barriques.
Lavinia black label: 2017 reserve, three years of aging in ex Chianti Classico barriques
Lavinia gold label: 2019 reserve, 3/4 blend of a 4-year-old ex grappa barrique and 1/4 of a one-year-old ex Chianti Classico barrique
It is a particular beer, which pairs well with meat dishes, stews, game roasts and highly matured cheeses.
